BREAKFAST RECIPES WITHOUT EGGS
Making something healthy and quick for breakfast is easy with eggs. But what if your doctor has asked you to go slow on eggs, what if you run out of eggs. Well it is difficult to imagine breakfast without eggs. So the next time you need to make some healthy and super tasty breakfast recipes without eggs, think of us.
1. GRANOLA SMOOTHIE
INGREDIENTS
- 1 cup of yogurt/curd
- 1/2 cup milk
- 1 banana, sliced
- 1/2 cup fresh strawberry halves or raspberries
- 4 granola bars of Nature Valley™ oats 'n honey
- In blender, add the yogurt, milk, strawberry halves and banana slices.
- Break up 3 granola bars and add to blender. Cover and blend on high speed 10 sec or until all the ingredients blends.
- Cover and blend about 20 sec longer or until smooth.
- Pour into 2 glasses. Crumble the remaining bar; sprinkle in each glass and top it up with fresh strawberries or raspberries.
2. OPEN FACED SALAD SANDWICH
- 2 slices of bread
- 2 tomatoes chopped in small cubes
- 1 cup chopped cucumber
- 2 tbsp cream cheese/cheese spread
- 2 tbsp feta cheese or paneer crumbled
- 1 tbsp olive oil
- salt and pepper to taste
- In a small bowl, add the chopped tomatoes and cucumbers and toss.
- Toast the bread slices lightly on both sides.
- Add the olive oil, salt and pepper and toss well.
- Spread a tablespoon of cream cheese on each slice of bread.
- Spoon half of the salad on each slice of bread
- Add the crumbled cheese or paneer on top
3. BEETROOT CHEELA/PANCAKES
- 1 cup besan
- 3 tbsp beetroot grated or juiced.
- 1/4 tsp red chili powder
- 1 pinch Asafoetida
- Salt to taste
- 1/2 cup yogurt (you could use Coconut milk if you are vegan)
- Cooking oil
METHOD
- Peel and grate a small beetroot on a fine grater
- Into a mixing bowl add besan, with the spice mixes, the grated beetroot and yogurt and mix well. Whisk well to form a smooth batter. Add a bit of water if required.
- Add 1 tsp oil to a frying pan. When the pan is hot, add a ladle full of the batter and spread it with the back of the ladle.
- Cook on one side and then flip over and cook the other side.
- Stack them up like pancakes and serve hot with green chutney or yogurt.
